Today’s Lunch

Rice Vermicelli cooked with tuna chunks, carrots and eggs. Other than the usual onion, garlic etc, I also threw in some Kankun (water spinach) stems.

My plate with extra red and green coral lettuce and kankun leaves. If i’m not wrong our island people call kankun “Hussain rahaa fai” 😉

Kankun (Water Spinach) is a good source of of iron, calcium, vitamins B and C and amino acids. (http://alternativeremedies.wordpress.com)

Coral lettuce has some anti-oxidants, plus folate and fibre. Deep-colored leaves are also a source of beta-carotene. (http://www.taste.com.au/how+to/articles/1162/coral+lettuce)
